The British catering industry is set to undergo significant
changes following amendments to Part L of the Building Regulations, with energy-efficiency
standards for non-domestic UK buildings rising by nine per cent.
In addition, the Non-Domestic Building Services Compliance
Guide, which was released in November 2013 as an accompaniment to Part L, set
maximum specific fan power (SFP) for kitchen extract systems at 1.0W/l/s (Watts
per litre per second of air moved).
Large kitchens within restaurants, hotels and workplaces use
around two-and-a-half times more energy per square metre of floor area than the
average building in the commercial sector. This, coupled with fluctuating
energy prices and the latest legislation means that upgrading old ventilation
within commercial kitchens should be a priority for facilities management.
